Very Veggie Risotto with Vodka (cause I didn't have any white wine in the house)
recipe is very approximate as I was mostly winging it and I'm very tired as I type this...
1/2 cup aborio rice
1/2 onion, diced
wilty celery heart from the bottom of the fridge, diced (maybe the equivalent of 1-2 stalks)
1 squeeze of tube of garlic puree = 1 clove (cause I can't be bothered to get my fingers smelly)
1 cup vegetable broth, or chicken would be OK too
1/2 cup vodka, you should really use dry white wine but all I had in the fridge was Sainsbury's dessert wine left over from New Years Eve (not opened) but I thought that would be overly sweet
5 spears asparagus, diced about 1 inch
1/2 courgette, quartered and diced
1 handfull (my hands are small) frozen peas
last chunk of the parmesan from the fridge, grated
13 fresh basil leaves from my garden :), roughly chopped
1 small knob butter
fresh ground black pepper
1 glug olive oil
- saute the onion, celery and garlic in a pan with the olive oil
- when onions start to go translucent add the rice
- cook for a few minutes then add the vodka, stir until most of the liquid has been absorbed
- continue to stir and add the broth one ladle at a time, don't add more until the liquid has been absorbed
- when you've added the last of the liquid take a taste and the rice should be slightly al dente
- add the vegetables and stir to mix
- cover with a lid for a few minutes to allow them to steam
- add the knob of butter, parmesan and fresh ground pepper
- stir again to mix and if the veggies still need a bit longer to cook then pop the lid on again
- please don't over cook the veggies, they are at their best when they still have a bit of crunch, I can't stand veggies cooked to mush. They should be bright green in colour
- take off heat and stir in the basil
- if you want a little added something feel free to mix in some fresh lemon juice or if you want a bit more subtle then some lemon zest (I had neither).
It was good, and as it serves 2 I have instant dinner for tomorrow.
Lobster in the clay pot
I love my clay pot! You soak it in water for 15 minutes before using so it absorbs moisture. Then you fill it with your choice of fresh ingredients, put the lid on and stick it in the oven. Add a little salt and seasoning maybe but no water. Do NOT preheat the oven, this is important! Turn it on once the pot is in and then cook for about an hour. You don't even have to check on it, actually it's better if you don't open the lid at all, so just do something else with the time. The food will steam inside the pot as it releases moisture. Nothing burns or dries out. Depending on the ingredients, a wonderful broth will form in the bottom of the pot. Summer squash and tomatoes or a little bit of white wine are great for helping this along. The food keeps its own taste and nutrients, nothing escapes or gets watered down. The clay pot is also the best way I have found to make lobster nice and juicy. And did I mention you can even bake bread in a clay pot? One more thing, never clean it with soap because the clay will absorb it. Just soak in warm water and then scrub with a potato brush. Some discoloration is normal. Store the pot with the lid off so air can circulate.
